Join the club, we have hats, t-shirts,blazers and full party outfits! But truly: I feel your pain. And the worse thing about it is that a lot of people just think we are being stubborn. No. We aren't. Why would I purposely choose not to like something that would do me good? I'm a logical person. And that just doesn't make sense. I don't shun healthy food because I'm ignorant or trying to be trendy.
One of my earliest memories is about my Mom and Dad not letting me get up from the tables because I refused to eat Pork n Beans
. I don't know if this is just a southern thing, but you'll find these at not just on dinner tables but at barbecues and wedding receptions even in the south. I hated them. I hated the slimy texture and the sweetness. I like sweets. I can eat fruit all day long with no complaints. But I have never understood why people have felt the need to need to sugar up vegetables. Even carrots I don't like with anything but pepper and salt. Peas, I found out I can actually tolerate if they are in something like a stir fry and not sweetened.
This story ended, if you are wondering, with me gagging and throwing up the entire contents on my meal on the kitchen floor. I can't remember how old I was, but I was young. I was probably four or five. To this day I can't help but feel my parents got what was coming for that one. I understand what they were trying to do, but sit anyone down and try to force something down their throat that makes them gag and you'll probably get a similar result. And why pork n beans? They are loaded with sugar. That's not nutritional.
This is not to say I don't like any vegetable. Sweet potatoes wear the crown in my line up. I can have them with every meal if I had to. Spinach is my favorite leafy green so long as it's not cooked. Carrots I like when cooked. Asparagus I can tolerate. Zucchini I tolerate when not cooked.Tomatoes when made into salsa, sauce or just grilled I can eat. Kale, when in a smoothie or salad. Cabbage when cooked and NOT with ham or bacon. And never alone. Can't stomach it alone. (I can't really count potatoes, because come on, they're mostly starch and turn to sugar.)
Compare it to the strawberries, blueberries, raspberries,cocunut,lemon,lime,bananas, star fruit,apples ,kiwis, nectarines, plums ect. that I like and would devour, fruits come out ahead for my supplier of good nutrition.
It's a damn shame that I don't like more vegetables but my taste buds are what they are. But leafy greens supply iron and magnesium, two things that good portion of the population are deficient in. Why do you care?
Well this is what not having enough magnesium can cause: bowel disease,anxiety problems,insomnia, heart disease,liver disease,nerve problems,hypertension, kidney disease - I'm only naming a few! See more here
As for iron and I have been iron deficient my whole life so I can tell you a little from experience, you can expect to be receiving a lovely a little add on to your life called anemia. (Something I am currently on a B12 liquid vitamin for.) And let me tell you, you don't know how much energy this zaps from you until you start to regain it back and realize how bad off you were. Here's a more complete list of symptoms.
And I'm not suggesting even with a ton of vegetables in your diet your safe because our soils are not nearly as rich as they once were when more people were doing factory farming as opposed to the rush rush rush process we do to get things on the shelves.
So why I am depressing you? What's the good news? Well, since I started seeing my new doctor who is an N.D. I have found Juice +
. I want to try this myself when I get paid again. It looks like a good deal for 120 capsules. Anyone can swallow a pill no matter what their taste buds are like.
Ad also if you think you are having magnesium deficiency and especially if you have trouble with bowel movements Natural Calm
This has personally helped me. Not just with irritable bowel but with sleeping better.
I want to do more research into nutrients in fruits vs nutrients in vegetables. A good question for my N.D. who I'll be seeing this week. I would like to make a sister post on that.
